2 zucchini
100g grated Parmesan cheese
100g breadcrumbs
2 eggs

Oil for frying
📍 Preparation
Slice the zucchini into even slices – not too thick, so they cook through evenly.
Beat the eggs in a bowl and season generously with salt and pepper.
In a second bowl, thoroughly mix the grated Parmesan cheese and breadcrumbs.
Dip each zucchini slice first in the egg mixture, ensuring it’s completely coated. Then, roll it in the Parmesan-breadcrumb mixture. Press firmly to ensure the breading adheres well.
… 5. Heat a little oil in a large frying pan over medium heat. Add the breaded zucchini slices and fry for about 3-4 minutes per side, until golden brown and crispy.
