Method 

How to Make Crockpot French Onion Meatloaf

  1. Prepare the Onions: Start by caramelizing your onions in a skillet over medium heat. Cook them for about 15-20 minutes until they’re golden brown and sweet, stirring occasionally.
  2. Mix the Meatloaf Ingredients: In a large bowl, combine ground beef, breadcrumbs, eggs, and dried thyme. Add in your caramelized onions, mixing everything gently until just combined.
  3. Shape the Meatloaf: Form the mixture into a loaf shape, about 1.5 to 2 inches thick, then place it into the crockpot.
  4. Prepare the Topping: Sprinkle the French onion soup mix evenly over the top of the meatloaf. Then layer the slices of Swiss cheese across the meatloaf.
  5. Cook Low and Slow: Cover your crockpot and set it on low for 6-8 hours, or high for 4 hours.
