Crispy Garlic Parmesan Chicken Delight
Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 cup grated Parmesan cheese (freshly grated for best flavor)
- 1 tablespoon minced garlic (or 2 cloves finely minced)
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon paprika (smoked or sweet)
- 2 large eggs, beaten
- 1 cup all-purpose flour
- 1 cup breadcrumbs (Italian-style or panko for extra crispiness)
- ¼ cup fresh parsley, finely chopped (plus more for garnish)
- 2 tablespoons olive oil (plus more if needed for frying)
- Optional: a pinch of chili flakes or Italian seasoning for extra flavor
- Optional: lemon wedges for serving
Directions:
1️⃣ Prepare the Chicken:
Start by flattening the chicken breasts so they cook evenly. Place each breast between two sheets of parchment paper or plastic wrap, and gently pound with a meat mallet or rolling pin until they’re about ½ inch thick. This not only helps with even cooking but also makes the chicken extra tender.
Pat the chicken dry with paper towels to remove excess moisture — this helps the coating adhere better and ensures a crispier crust.
