Ingredients:
For the cake:
- 5 eggs
- 180 g sugar
- 1 packet vanilla sugar
- 200 ml oil
- 200 ml milk
- 250 g ground hazelnuts or walnuts
- 250 g flour
- 1 packet baking powder
For the cream: - 500 ml heavy cream
- 250 g mascarpone
- 2 packets cream stabilizer
- 80 g powdered sugar
- 1 tsp vanilla extract
For the topping: - Chopped walnuts
- A little powdered sugar
Preparation:
1️⃣ Preheat the oven to 180 °C (350 °F).
2️⃣ Beat the eggs with the sugar and vanilla sugar until creamy. Slowly stir in the oil and milk.
3️⃣ Mix the flour, baking powder, and ground nuts, then gently fold them in.
4️⃣ Pour the batter onto a baking sheet lined with parchment paper and bake for approximately 25–30 minutes. Then let it cool completely.
5️⃣ For the cream, whip the heavy cream with the cream stabilizer until stiff peaks form. Stir together the mascarpone, powdered sugar, and vanilla, then fold in the whipped cream.
6️⃣ Slice the cake horizontally in half. Spread the bottom half with cream, place the second half on top, and spread more cream on top.
7️⃣ Sprinkle with chopped walnuts and lightly decorate with powdered sugar.
8️⃣ Refrigerate for at least 2 hours before serving.
