Ingredients

Cake Batter

  • 2 cups (250 g) all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup (225 g) unsalted butter, softened
  • 1½ cups (300 g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup (120 ml) whole milk

Optional Additions

  • 1 teaspoon lemon zest
  • ½ teaspoon almond extract
  • ½ cup chocolate chips
  • ½ cup chopped walnuts or pecans
  • Fresh berries for serving
  • Powdered sugar for dusting

Tips for Success

  • Use room-temperature butter, eggs, and milk for a smooth batter.
  • Cream the butter and sugar until light and fluffy for the best texture.
  • Sift the flour and baking powder to prevent lumps.
  • Mix only until the ingredients are combined to avoid a dense cake.
  • Do not open the oven during the first 30 minutes of baking.
  • Allow the cake to cool before slicing for clean, even pieces.

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch (20 cm) round cake pan.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the butter and sugar until pale and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the vanilla extract.
  6. Add the dry ingredients in three additions, alternating with the milk, beginning and ending with the flour mixture.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Slice and serve plain or with your favorite toppings.

My mother-in-law poured boiling oil over me because dinner was late, and the pain swallowed everything before I c0llapsed. At the hospital, my husband squeezed the doctor’s shoulder and said, “She’s always been clumsy. She spilled a bowl of soup on herself.” I lay motionless behind the curtain, listening. Then the doctor stepped closer and whispered, “That’s strange—because these burns don’t look accidental, and the police are already downstairs.”
