Ingredients
For the Carrot Cake Roll
• 2 cups grated carrots
• 3 large eggs
• 1 cup granulated sugar
• 1 cup all-purpose flour
• 1 tsp baking powder
• 1 tsp ground cinnamon
• 1/4 tsp ground nutmeg
• 1/4 tsp salt
• 1 tsp vanilla extract
• 1/3 cup vegetable oil
• 1/2 cup chopped walnuts or pecans
For the Cream Cheese Frosting
• 8 oz cream cheese, softened
• 1/4 cup unsalted butter, softened
• 2 cups powdered sugar
• 1 tsp vanilla extract
Directions
Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper. Beat eggs and sugar until light and fluffy.
Mix in oil and vanilla. Stir in flour, baking powder, cinnamon, nutmeg, and salt. Fold in grated carrots and nuts. Spread evenly in the pan and bake 10–12 minutes until set.
While warm, turn cake onto a clean towel dusted with powdered sugar and gently roll it up with the towel. Let cool completely.
For the frosting, beat cream cheese, butter, powdered sugar, and vanilla until smooth. Unroll cooled cake, spread frosting evenly, then roll back up carefully. Chill before slicing.
