Ingredients
- 12 oz 340 g spaghetti or linguine
- 1 lb 450 g raw shrimp, peeled and deveined
- 4 tablespoons olive oil divided
- 6 cloves garlic finely minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ¼ teaspoon red pepper flakes optional
- ½ cup chicken broth
- ½ cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons fresh parsley chopped
- Juice of ½ lemon
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup of pasta water, then drain.
- In a bowl, season shrimp with salt, pepper, paprika, and red pepper flakes.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add shrimp and cook 1–2 minutes per side until pink and just cooked through. Remove shrimp and set aside.
- In the same pan, add remaining olive oil and butter. Stir in minced garlic and sauté for about 30 seconds until fragrant.
- Pour in chicken broth and let it simmer for 2 minutes to reduce slightly.
- Stir in heavy cream and Parmesan cheese. Simmer gently until the sauce thickens, about 3–4 minutes.
- Add cooked pasta and reserved pasta water as needed to loosen the sauce. Toss until well coated.
- Return shrimp to the skillet and toss gently to combine.
- Finish with lemon juice and fresh parsley. Taste and adjust seasoning if needed.
- Serve hot with extra Parmesan on top.
