A cheesy, spicy, comfort-food classic loaded with bold Hatch chile flavor and crunchy Fritos!

Ingredients:
* 1 lb ground beef
* 1 small onion, diced
* 2 cloves garlic, minced
* 1 can (15 oz) pinto beans, drained
* 1 can (10 oz) diced tomatoes with green chiles
* 1 cup Hatch green chiles, roasted and chopped
* 1 packet taco seasoning
* 1/2 cup beef broth
* 3 cups Fritos corn chips
* 2 cups shredded cheddar cheese
* 1/2 cup Monterey Jack cheese
* 1/2 tsp cumin
* Salt and pepper to taste
* Chopped green onions (for garnish)
Instructions:
1. Preheat oven to 375°F (190°C).
2. In a skillet, cook ground beef and onion over medium heat until browned. Drain excess grease.
3. Add garlic and cook for 1 minute.
4. Stir in beans, diced tomatoes, Hatch chiles, taco seasoning, cumin, and beef broth. Simmer for 10 minutes.
5. In a baking dish, layer half the Fritos, then half the beef mixture, then a layer of cheese.
6. Repeat layers, finishing with cheese on top.
7. Bake for 15–20 minutes until bubbly and melted.
8. Let cool slightly, garnish with green onions, and serve warm.

Add a dollop of sour cream or a drizzle of hot sauce on top for extra creamy heat!
