Description
Delightful bite-sized Lemon Truffles, blending zesty lemon with creamy white chocolate for a refreshing treat.
Ingredients
- 1 cup white chocolate chips
- 1/4 cup heavy cream
- 2 tbsp lemon zest
- 2 tbsp lemon juice
- 1/2 tsp vanilla extract
- 1/4 cup powdered sugar
Instructions
- Melt the white chocolate chips with the heavy cream in a heatproof bowl over a double boiler, stirring continuously until smooth.
- Stir in the lemon zest, lemon juice, and vanilla extract until well combined.
- Refrigerate the mixture for 1 to 2 hours, or until firm but still pliable.
- Scoop small portions of the mixture and roll into bite-sized balls.
- Roll each truffle in powdered sugar to coat evenly.
- Place back in the refrigerator for an additional 30 minutes to set before serving.
Notes
For best flavor, prepare the truffles a day in advance. Use fresh lemons instead of bottled juice for better taste.
