Ingredients
- 2 large boneless skinless chicken breasts (or 4 small), sliced into strips
- 2 tablespoons olive oil
- 2 tablespoons butter divided
- 3 cloves garlic minced
- 2 cups chicken broth
- 8 oz 225 g egg noodles
- 1/2 teaspoon salt adjust to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley optional
Instructions
- Cook the chicken
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken with salt, pepper, and paprika.
- Add to the pan and cook for about 5–6 minutes, turning occasionally, until golden and cooked through.
- Remove and set aside.
- Build the base
- In the same pan, melt 1 tablespoon of butter.
- Add minced garlic and cook for about 30 seconds until fragrant.
- Cook the noodles
- Pour in the chicken broth and bring to a light boil.
- Add the egg noodles and Italian seasoning.
- Stir, reduce heat to medium, and let simmer for 8–10 minutes, stirring occasionally, until noodles are tender and most of the liquid is absorbed.
- Combine everything
- Return the cooked chicken to the pan.
- Add the remaining 1 tablespoon butter and Parmesan cheese.
- Toss everything together until the noodles are glossy and coated.
- Finish and serve
- Sprinkle with fresh parsley if desired.
- Serve warm straight from the pan.
