Ingredients:
– 24 ounces cream cheese, softened
– 1 cup granulated sugar
– 1 tablespoon lemon juice
– 2 cups heavy cream
– 1 cup powdered sugar
– 1 teaspoon vanilla extract
– 2 cups fresh strawberries, sliced
– 1 1/2 cups graham cracker crumbs
– 1/2 cup unsalted butter, melted
Directions:
1. Preheat your oven to 350°F (175°C) and give a round cake pan a good greasing!
2. In a mixing bowl, beat together the softened cream cheese, granulated sugar, and lemon juice until it’s smooth and creamy.
3. In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form—it’s going to be fluffy!
4. Gently fold that dreamy whipped cream into the cream cheese mixture until just combined.
5. In another bowl, mix the graham cracker crumbs with the melted butter, then press this mixture firmly into the bottom of your greased cake pan.
6. Spread half of the cream cheese mixture over the crust, layer on those beautiful sliced strawberries, and then repeat with the remaining cream cheese mixture.
7. It’s time for some patience! Refrigerate for at least 4 hours, or better yet, overnight, until it’s all set and ready to impress.
8. Serve chilled, garnished with extra strawberries for that delightful finishing touch.
