Strawberry Vanilla Soft Love Cookies

Strawberry Vanilla Soft Love Cookies are soft, buttery vanilla cookies filled with juicy strawberry pieces and finished with a sweet vanilla glaze that melts lightly into the tops. These bakery-style cookies stay tender for days and bring the perfect mix of fruity sweetness and cozy homemade flavor. Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped strawberries
  • For the Vanilla Glaze
  • 1 cup powdered sugar
  • 1 to 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  3. Mix in the egg and vanilla extract until smooth.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Slowly add the dry ingredients into the wet ingredients and mix just until combined.
  6. Fold in the chopped strawberries gently so they stay evenly distributed throughout the dough.
  7. Scoop rounded portions of dough onto the prepared baking sheets, leaving space between each cookie.
  8. Bake for 11 to 14 minutes or until the edges are lightly golden and the centers remain soft.
  9. Allow the cookies to cool for 5 minutes before transferring to a cooling rack.
  10. For the glaze, whisk powdered sugar, milk, and vanilla together until smooth.
  11. Drizzle the glaze over the cooled cookies and let it set before serving.

Notes

  • Pat the strawberries dry before adding them to the dough so the cookies stay soft instead of soggy.
  • Do not overbake the cookies because they continue setting while cooling.
  • Chill the dough for 15 to 20 minutes if it feels too soft before baking.
  • The vanilla glaze gives the cookies a bakery-style finish and extra sweetness.
  • Store cookies in an airtight container to keep them soft for several days.
