Ingredients
- 2 boneless, skinless chicken breasts (about 1 pound total)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup sliced mushrooms
- 1 cup chopped green bell pepper
- 1 cup chopped onion
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled bacon (about 4 slices)
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper on both sides.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the mushrooms, bell pepper, and onion. Sauté for about 5-7 minutes until the vegetables are tender.
- Return the chicken to the skillet, placing it on top of the sautéed vegetables. Sprinkle the shredded cheddar cheese and crumbled bacon over the chicken.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
- Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
