Ingredients
1 cup broccoli florets
1 small carrot (diced)
½ cup cabbage (shredded)
½ onion (chopped)
2 cloves garlic (minced)
½ cup noodles or pasta (optional)
4 cups vegetable broth or water
1 tbsp olive oil
Salt and black pepper to taste
½ tsp dried herbs (like oregano or mixed herbs)
1 tbsp chopped parsley or spring onion
Instructions
Heat oil in a pot on medium heat.
Add onion and garlic, sauté for about 1–2 minutes until fragrant.
Add carrot, cabbage, and broccoli. Stir for 2 minutes.
Pour in vegetable broth/water and bring to a boil.
Add noodles or pasta (if using).
Season with salt, pepper, and herbs.
Simmer for 8–10 minutes until vegetables and noodles are tender.
Sprinkle parsley or spring onions on top and serve hot.
Tip: Add a squeeze of lemon or a pinch of chili flakes for extra flavor.
