Ingredients
For the Quiche
- 2 cups cottage cheese lower in fat and calories
- 2 cups fresh spinach or frozen spinach
- 4 large eggs bind the ingredients
- 1 cup grated Parmesan cheese substitute with any cheese you prefer
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup fresh herbs optional, like parsley or chives
For Serving
- 2 cups mixed greens adds crunch and balances the quiche
- 2 tablespoons balsamic vinaigrette for dressing the greens
Method
Preparation
- Preheat the oven to 375°F (190°C).
- Sauté the fresh spinach in a skillet over medium heat for about 2-3 minutes.
- Whisk together the eggs, cottage cheese, grated Parmesan, salt, and pepper in a large bowl.
- Fold the sautéed spinach into the egg mixture gently.
- Pour the mixture into a greased pie dish or oven-safe skillet.
- Bake in the preheated oven for 30-35 minutes or until puffed and lightly golden.
- Cool for a few minutes before slicing.
