Cottage Cheese & Spinach Crustless Quiche for Easy Brunch Bliss

Ingredients

For the Quiche

  • 2 cups cottage cheese lower in fat and calories
  • 2 cups fresh spinach or frozen spinach
  • 4 large eggs bind the ingredients
  • 1 cup grated Parmesan cheese substitute with any cheese you prefer
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup fresh herbs optional, like parsley or chives

For Serving

  • 2 cups mixed greens adds crunch and balances the quiche
  • 2 tablespoons balsamic vinaigrette for dressing the greens

Method 

Preparation

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the fresh spinach in a skillet over medium heat for about 2-3 minutes.
  3. Whisk together the eggs, cottage cheese, grated Parmesan, salt, and pepper in a large bowl.
  4. Fold the sautéed spinach into the egg mixture gently.
  5. Pour the mixture into a greased pie dish or oven-safe skillet.
  6. Bake in the preheated oven for 30-35 minutes or until puffed and lightly golden.
  7. Cool for a few minutes before slicing.
