Method
Directions
- Boil the Pasta: Bring a large pot of salted water to a rolling boil and cook the penne pasta according to package instructions until al dente, about 10-12 minutes. Drain and set aside, reserving some pasta water.
- Cook the Chicken: In a large skillet over medium heat, add a tablespoon of oil and sauté the chicken breast pieces until golden brown and cooked through, approximately 6-8 minutes. Remove and set aside.
- Sauté the Veggies: In the same skillet, add another tablespoon of oil, then toss in the diced bell pepper and sliced zucchini. Stir-fry for about 3-4 minutes until they are tender and vibrant.
- Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, taking care not to let it burn.
- Prepare the Sauce: Pour in the heavy cream, stirring gently to combine with the veggies. Add the grated Parmesan cheese, salt, and black pepper, letting it simmer for about 3-5 minutes until slightly thickened.
- Combine Everything: Return the cooked chicken and drained pasta to the skillet, tossing everything together until the pasta is well coated in the creamy sauce. Add reserved pasta water a little at a time if needed to reach your desired consistency.
- Garnish and Serve: Remove from heat and garnish with torn fresh basil. Serve immediately to enjoy the flavors at their best!
