INGREDIENTS
Baking:
6 eggs
9 tablespoons flour
9 tablespoons sugar
2 tablespoons cocoa
1 baking powder
Cream:
4 egg yolks
2 tablespoons flour
4 sachets vanilla sugar
200 milk
100 sugar
1 stick butter
Icing:
4 egg whites
200 sugar
1 teaspoon lemon juice
grated chocolate – optional

PREPARATION METHOD FOR THE RECIPE
Dessert Cake Day and Night:
Crust: Beat 6 egg whites well, then add the sugar and continue mixing until a meringue is obtained. Add the yolks and mix with a spatula, then add the flour mixed with baking powder and cocoa.
Grease a tray, put baking paper, turn the composition over in the tray and put in the oven for approximately 30 minutes, at 160 degrees.
In the meantime, prepare the cream: mix 4 egg yolks with 2 tablespoons of flour and vanilla sugar, then gradually add the milk and sugar and put on the heat until it thickens completely. Leave to cool, then mix with a pack of butter at room temperature, rubbed into foam.
Glaze: Beat the 4 egg whites left over from the cream well with the sugar and a little lemon juice, then when they have hardened well, beat in a bain-marie until they become glossy.
Spread the cream over the cooled cake, smooth it out well, then add the egg white glaze, then add the candies or grated chocolate.
If you want more cream, you can even add a packet and a half of butter instead of one packet.
