Ingredients
For the Filet Mignon
- 4 filet mignon steaks (about 6 oz each, 1.5 inches thick)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
For the Shallot Peppercorn Cream Sauce
- 1 tablespoon butter
- 1/4 cup finely chopped shallots
- 1 tablespoon cracked black peppercorns
- 1/2 cup beef broth
- 1 cup heavy cream
- Salt, to taste
Directions
1. Prepare and season the steaks
Remove the filet mignon steaks from the refrigerator about 20 minutes before cooking to allow them to come to room temperature. This ensures even cooking. Pat them dry with paper towels, then season generously on both sides with salt and freshly ground black pepper.
2. Sear the filet mignon
Heat the olive oil in a heavy-bottomed skillet over medium-high heat until shimmering. Carefully place the steaks in the hot pan, making sure not to overcrowd it. Sear for about 4–5 minutes per side for medium-rare, without moving the steaks, allowing a deep golden-brown crust to form. Adjust the cooking time depending on your preferred doneness. Once cooked, transfer the steaks to a plate and let them rest, loosely covered, while you prepare the sauce.
3. Start the sauce
Lower the heat to medium and add the butter to the same skillet. Once melted, add the chopped shallots. Sauté gently for 2–3 minutes until they become soft, translucent, and aromatic, taking care not to brown them.
4. Build depth and richness
Stir in the cracked black peppercorns and cook for about 1 minute to release their fragrance. Pour in the beef broth, scraping up any browned bits from the bottom of the pan—these add incredible flavor to the sauce. Let the broth simmer for 2–3 minutes to reduce slightly.
5. Finish the cream sauce
Add the heavy cream and bring the mixture to a gentle simmer. Cook for 5–7 minutes, stirring occasionally, until the sauce thickens to a silky, spoon-coating consistency. Taste and adjust seasoning with salt if needed.
6. Serve
Place each filet mignon on a warm plate and generously spoon the shallot peppercorn cream sauce over the top. Garnish with fresh herbs such as parsley or thyme if desired.
