  • 2 zest lemons intensifies the lemony goodness for a vibrant taste
  • 1/4 cup heavy cream creates a luscious, creamy texture in the filling
  • 1 tablespoon cornstarch thickens the filling for a perfect consistency

Method 

Carefully Follow

  1. Preheat your oven to 350°F (175°C), ensuring the perfect baking environment for your creamy lemon squares.
  2. Prepare the crust by mixing 1 cup all-purpose flour, 1/2 cup softened unsalted butter, 1/4 cup powdered sugar, and 1/4 teaspoon salt in a bowl. Blend until crumbly.
  3. Press the crust mixture into a greased 8×8-inch baking dish, spreading it evenly to form a solid base and bake for about 15 minutes until lightly golden.
  4. Whisk together 3 large eggs, 1 cup granulated sugar, 1/2 cup fresh lemon juice, zest of 2 lemons, 1/4 cup heavy cream, and 1 tablespoon cornstarch in a separate bowl. This will be your creamy filling.
  5. Pour the lemon mixture over the pre-baked crust and return to the oven to bake for an additional 20-25 minutes. You want it just set, with a slight jiggle in the center.
  6. Cool the squares at room temperature before refrigerating for at least 2 hours. This will help achieve that perfect creamy texture.
  7. Slice into squares, dust with powdered sugar for an elegant touch, and serve chilled.
