Ingredients:
3 ripe bananas, mashed (the riper they are, the less sweetener you need)
2 cups oat flour (ground oats)
½ cup plain Greek yogurt (replaces oil/butter for moisture)
2 eggs
¼ cup maple syrup or honey (or a pinch of Stevia to lower calories further)
1 tsp baking soda
1 tsp cinnamon & a pinch of salt
Instructions:
Prep: Preheat oven to 350°F (175°C) and grease a loaf pan.
Mix Wet: In a large bowl, whisk the mashed bananas, eggs, Greek yogurt, and sweetener until smooth.
Mix Dry: Fold in the oat flour, baking soda, cinnamon, and salt. Stir until just combined (don’t overmix!).
Bake: Pour into the pan and bake for 45–50 minutes.
Cool: Let it sit for 10 minutes before removing from the pan.
