Flavor Intensity

  • Spice Level: Mild to Medium
  • Creaminess: Medium
  • Smokiness: Medium
  • Freshness: High

You can increase the heat by adding jalapeños, cayenne pepper, or hot sauce.

Step-by-Step Instructions

Step 1: Prepare the Rice

Cook the rice according to package instructions if you have not already done so. Fluff with a fork and set aside. For extra flavor, stir in lime juice and chopped cilantro.

Time: 15–20 minutes
Intensity: Easy

Step 2: Season the Chicken

Place diced chicken in a large bowl. Add olive oil, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, pepper, and lime juice. Toss until evenly coated.

Allow the chicken to marinate for at least 10 minutes for deeper flavor.

Time: 10 minutes
Intensity: Medium

Step 3: Cook the Chicken

Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 7–10 minutes, stirring occasionally, until golden brown and fully cooked.

The internal temperature should reach 165°F (74°C).

Remove from heat and set aside.

Time: 10 minutes
Intensity: Medium

Step 4: Make the Street Corn Mixture

In the same skillet, melt butter over medium heat. Add corn and cook for about 5 minutes until slightly charred.

Transfer the corn to a mixing bowl and stir in mayonnaise, sour cream, cotija cheese, chili powder, lime juice, cilantro, and salt.

Mix until creamy and fully combined.

Time: 8 minutes
Intensity: Easy

Step 5: Assemble the Bowls

Divide the rice evenly among four serving bowls. Top with cooked chicken and generous spoonfuls of the street corn mixture.

Add avocado slices, cherry tomatoes, red onion, and additional cilantro.

Serve with lime wedges on the side.

Time: 5 minutes
Intensity: Very Easy

Tips for the Best Street Corn Chicken Rice Bowl

Use Fresh Corn When Possible

Fresh sweet corn creates the best flavor and texture, especially during summer months.

Don’t Overcook the Chicken

Chicken breast cooks quickly. Overcooking can make it dry, so monitor it carefully.

Char the Corn

Allowing the corn to caramelize slightly adds smoky flavor and mimics authentic Mexican street corn.

Customize Your Bowl

Add black beans, jalapeños, shredded lettuce, or tortilla strips for extra texture and flavor.

Storage Instructions

Store leftovers in airtight containers in the refrigerator for up to 4 days. Keep toppings like avocado separate until serving to maintain freshness.

For meal prep, divide ingredients into containers and assemble just before eating.

Serving Suggestions

This Street Corn Chicken Rice Bowl pairs wonderfully with:

  • Tortilla chips and salsa

You can also turn this recipe into burritos, tacos, or loaded nachos using the same ingredients.
