- 1 teaspoon cornstarch
- ¼ cup water or beef broth
- ½ teaspoon sesame oil
For the Stir-Fry
- 2 tablespoons vegetable oil
- 1 large sweet onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Black pepper or white pepper, to taste
- Sliced green onions, for garnish (optional)
👩🍳 Instructions
Marinate the Beef
Place the thinly sliced beef into a bowl. Add the soy sauce, sesame oil, cornstarch, sugar, and grated garlic or ginger. Mix thoroughly until every slice is evenly coated. Let the beef marinate for at least 20 minutes. This step not only seasons the meat but also helps tenderize it and creates that smooth, velvety texture typical of takeout-style stir-fries.
Prepare the Sauce
In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, cornstarch, water (or beef broth), and sesame oil. Stir until the cornstarch is fully dissolved and the sauce is smooth. Set aside so it’s ready to go—stir-frying moves quickly once you start cooking.
Sear the Beef
Heat a large wok or skillet over high heat until it is very hot. Add 1 tablespoon of vegetable oil and swirl to coat the pan. Add the beef in a single layer and let it sear undisturbed for about 1 minute. Stir and cook for another minute, just until the beef is browned but still tender. Remove the beef from the pan and set it aside. Avoid overcooking at this stage to keep the meat juicy.
Cook the Onions and Aromatics
Add the remaining tablespoon of oil to the same pan. Add the sliced sweet onions and stir-fry for 2–3 minutes, allowing them to soften and lightly caramelize. Stir in the minced garlic and grated ginger, cooking for about 30 seconds until fragrant.
Combine and Sauce
Return the cooked beef to the pan with the onions. Pour in the prepared sauce and stir continuously. Cook for 1–2 minutes, letting the sauce thicken and turn glossy as it coats the beef and onions evenly.
Finish and Serve
Season with black or white pepper to taste. Remove from heat and garnish with sliced green onions if desired. Serve immediately over steamed rice or noodles.
🍚 Serving Tips
- Slice the beef as thinly as possible for maximum tenderness.
