oatmeal and cabbage recipe

Intensity notes:

Ingredients

For the base

• 2 tbsp olive oil (or butter)
• ½ medium head green cabbage (about 4 cups shredded)
• 1 medium yellow onion, diced
• 2 cloves garlic, minced
• 1 cup rolled oats (old-fashioned — not instant)
• 2 cups vegetable broth (or chicken broth)
• 1 cup water
• ½ tsp salt (plus more to taste)
• ½ tsp black pepper
• ¼ tsp smoked paprika (optional, for depth)

For finishing (optional but recommended)

• 2 tbsp nutritional yeast or grated Parmesan (for umami)
• 1 tbsp apple cider vinegar or lemon juice (brightness)
• Fresh dill or parsley, chopped
