Ingredients

For the Chicken

  • 2 large chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of ½ lime

For the Street Corn Mixture

  • 3 cups corn kernels (fresh, frozen, or canned)
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ½ cup crumbled cotija cheese or feta cheese
  • 1 tablespoon lime juice
  • ½ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • 2 tablespoons chopped cilantro

For the Rice Bowl

  • 3 cups cooked white rice or brown rice
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup sliced red onion
  • Extra lime wedges
  • Fresh cilantro for garnish

Kitchen Equipment Needed

  • Large skillet
  • Mixing bowls
  • Wooden spoon or spatula
  • Knife and cutting board
  • Measuring spoons and cups

Step-by-Step Instructions

Step 1: Prepare the Rice

Cook your rice according to package instructions if it is not already prepared. Fluffy jasmine rice works beautifully in this recipe, but brown rice or cilantro lime rice also taste amazing.

Set the rice aside and keep warm while preparing the other ingredients.

Step 2: Season the Chicken

In a medium bowl, combine the diced chicken with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, pepper, and lime juice.

Mix well until all pieces are evenly coated with seasoning.

Let the chicken marinate for about 10 minutes while heating the skillet. This helps the spices absorb into the meat and enhances the flavor.

Step 3: Cook the Chicken

Heat a large skillet over medium-high heat.

Add the seasoned chicken and cook for 8–10 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. The internal temperature should reach 165°F (74°C).

The edges should develop a slight char for extra smoky flavor.

Remove the chicken from the skillet and set aside.

Step 4: Make the Street Corn Mixture

Using the same skillet, add the corn kernels. Cook over medium-high heat for 4–5 minutes until slightly charred.

In a mixing bowl, combine:

  • Charred corn
  • Mayonnaise
  • Sour cream
  • Cotija cheese
  • Lime juice
  • Chili powder
  • Garlic powder
  • Chopped cilantro

Mix everything together until creamy and evenly combined.

The mixture should be rich, tangy, and slightly smoky.

Step 5: Assemble the Bowls

Divide the cooked rice evenly among four serving bowls.

Top each bowl with:

  • Cooked chicken
  • Street corn mixture
  • Avocado slices
  • Cherry tomatoes
  • Red onion

Garnish with extra cilantro and fresh lime wedges.

Serve immediately while warm.

Tips for the Best Street Corn Chicken Rice Bowl

Use Fresh Lime Juice

Fresh lime juice makes a huge difference in flavor. Bottled lime juice does not provide the same bright freshness.

Char the Corn Well

Allow the corn to slightly blacken in the skillet. The char adds authentic street corn flavor and extra depth.

Do Not Overcook the Chicken

Chicken breast cooks quickly, so keep an eye on it. Overcooked chicken can become dry.

Customize the Heat Level

Add diced jalapeños, hot sauce, or extra chili powder if you like spicy meals.

Recipe Variations

Make It Low Carb

Swap the rice for cauliflower rice to create a lower-carb version.

Try Different Proteins

This recipe also works wonderfully with:

  • Shrimp
  • Steak
  • Ground turkey
  • Tofu

Add Extra Vegetables

Boost the nutrition with:

  • Bell peppers
  • Black beans
  • Lettuce
  • Cucumber
  • Roasted zucchini

Meal Prep Instructions

Street Corn Chicken Rice Bowls are excellent for meal prep because the ingredients store well separately.

To Store

Place the rice, chicken, and corn mixture into airtight containers and refrigerate for up to 4 days.

Store fresh toppings separately for the best texture.

To Reheat

Microwave the rice and chicken for 1–2 minutes until warm. Add the fresh toppings after reheating.

What to Serve with Street Corn Chicken Rice Bowls

Although these bowls are already filling, they pair beautifully with simple side dishes like:

  • Tortilla chips and salsa
  • Fresh guacamole
  • Black bean salad
  • Grilled vegetables
  • Lime sparkling water

For parties, you can even create a rice bowl bar and let everyone customize their own bowl.

Flavor Profile

This recipe delivers layers of flavor and texture:

  • Smoky seasoned chicken
  • Sweet charred corn
  • Creamy cheesy sauce
  • Fresh lime brightness
  • Crunchy vegetables
  • Warm fluffy rice

Every bite is balanced, comforting, and refreshing at the same time.

Common Questions

Can I Use Rotisserie Chicken?

Yes. Rotisserie chicken is a great shortcut for busy nights. Simply season lightly and warm before serving.

What Cheese Can Replace Cotija?

Feta cheese is the best substitute because it has a similar salty texture.

Can I Freeze It?

The chicken and rice freeze well, but the creamy corn mixture is best made fresh.
